Asian Chicken Salad

Combine in large bowl:

4c grilled chicken, cut in strips (or broiled, or poached)
1c canned mandarin oranges, drained, juice reserved
2/3c sliced scallions
1/2c roasted peanuts

Whisk together in small bowl:

2/3c reserved orange juice
1/2c peanut oil (or canola)
2T fresh lemon juice
1.5t chili oil (optional)
1t (or more!) fresh minced ginger (you could probably use dried) **
1/2t salt (or to taste)
1/4t pepper

Pour 1/2c dressing over chicken mixture & toss. Adust seasonings. Toss remaining dressing with:

4c shredded Chinese cabbage

Top with:

1/2c chopped peanuts
1c chow mein noodles


* Adjust any of these ingredients you wish.
** My grocery store carries bottled sliced ginger. It's nice to have on hand if I'm out of fresh.
