Indian Curry Lentils and Rice

Saute two onions, sliced, in a bit of olive oil till brown & caramelized.

In a sauce pan, add 2c dried lentils with one 14.5oz can of chicken broth and enough water to cover. Add 1.5t curry, 1t garlic powder, and salt and pepper. Bring to a boil, then simmer 10 minutes. Add 1 cup brown rice & enough water to cover. Bring to boil again & simmer till rice is tender.

When ready to serve toss in lots of chopped cilantro and pass plain yogurt on the side. Top with caramelized onions.
