Beef, Black Bean, and Chorizo Chili




Beef, Black Bean, and Chorizo Chili

Brown:

2 links Spanish chorizo, sliced

Remove from pan & brown:

2lbs ground beef or
2lbs beef stew meat

Remove from pan & sauté till soft:

1 1/2c onions, chopped
6 garlic cloves, minced

Add:

1 small can tomato paste
2t sugar
1t salt
2t unsweetened cocoa powder
1t coriander
1t oregano
1t cumin

Cook 1 minute and add:

1c red wine
2 14oz beef broths
1 28oz canned tomatoes, chopped, undrained
1/4c lime juice

Bring to boil. Reduce heat and add meats back to pot. Simmer one hour. Add:

2 15oz cans black beans, rinsed
1 15oz can pinto beans, rinsed

Simmer 20 minutes. Serve with scallions, cilantro, cheddar cheese, sour cream, and nacho chips.
