Squash and Spinach Soup with Ditalini


Don't like spinach at your house? Try serving this soup as Dagoba Soup. This delicous meal comes right from Yoda's home planet (it's Yoda colored too!). It's complete with vitamin & mineral rich Dagoba rocks (ditalini). My little Jedis loved it.






In a large saucepan, melt and then saute till soft:

3T butter
1 medium onion, chopped
3 medium sized squash, chopped

Add to coat with butter:

1lb potatoes, peeled & cut into 3/4" chunks
1lb spinach, trimmed, washed well & chopped

Add and simmer till veggies are tender:

2c chicken broth
2c water

Puree soup. Add 1 cup of cooked ditalini (or if not available in your area, any small pasta). Season with salt and pepper.
