Homemade Whoopie Pies

(They look better in real life!)

HOMEMADE WHOOPIE PIES

In a large mixing bowl, cream together:

1/2c shortening
1c brown sugar, packed
1 large egg

In another bowl, combine:

1/4c + 2T cocoa powder
2c all-purpose flour
1t baking powder
1t baking soda
1t salt

In another bowl, combine:

1c milk
1.5t vanilla

Alternately add the dry ingredients with the milk mixture to the creamed shortening, sugar, and egg mixture. Drop by 1/4c onto greased or parchment lined cookie sheets, leaving 2" between pies. Bake at 350 for 15 minutes or until cakes spring back when touched.

For the filling, beat together:

1c shortening
1c confectioner's sugar
1 1/3c marshmallow creme (or Fluff)
1/4t salt dissolved in 1T water
1.5t vanilla

Spread half the cakes with filling. Top with remaining halves. Makes about 9 large whoopie pies.
