Groceries 2/19

Wow! This week’s grocery total came to $78.69. I’ve been stocking up on items for over a month now that are ½ price or less. I see the results of these savings each week in my grocery total. For example, this week chicken is on sale for $1.69/lb and beef roasts are on sale for $1.49lb. I bought two packages of each for my freezer. (I do not have an extra freezer or refrigerator – just the one in my kitchen)

Here’s what’s on the menu for dinner at our house this week:

Green soup with green noodles. This is a recipe from Molly Katzen’s Enchanted Broccoli Forest. It calls for zucchini, spinach, spinach pasta, and pesto. I’m serving it with crusty bread.

Teriyaki pork chops with homemade fried rice, pineapples, and dumplings.

Crock Pot pork roast with green chiles, cumin, coriander, oregano, and other spices. The pork gets shredded and then served on homemade flour tortillas (half whole wheat, half white flour), salsa, and refried beans. Side dish of corn.

Crock Pot meatloaf with vegetable remoulade. The veggies are from Molly Katzen’s book and include carrots, celery, and other veggies with a sour cream tarragon sauce. The Crock Pot produces a moist meatloaf with a smooth consistency.

Tilapia with Molly Katzen’s very, very marinated potatoes and a Caesar salad. The potatoes resemble a German potato salad. The tilapia will be coated with a blackening seasoning and sautéed in olive oil.

Chick pea Korma. This is such a quick and tasty meal! I stock up on pre-made Korma sauce at our local Indian grocery stores. To two cans of chick peas I add a jar of Korma and two cans of coconut milk. After simmering about 20 minutes I serve it over basmati and place homemade Indian Fry Bread on the table for passing.

Pasta with olive oil and garlic. Large salad with lots of veggies.

For lunches this week we will have leftovers, some form of eggs, PB&Js, yogurt, assorted cheeses, fruits, and vegetables. Breakfasts are yogurt, oatmeal, pancakes or waffles, fruit, and orange juice. Snacks are more of the same. Oh, and I’m trying my first-ever Crock Pot dessert: Steamed chocolate pudding. It’s made in a Bundt pan and consists of flour, chocolate, eggs, sugar, and a few other items. I will serve it with whipped cream. (*Update: I tried this tonight & it was really delicious! Would have been even better with hot fudge or ganache over it)

I don’t normally use my Crock Pot more than once a week, but my oven is being replaced in two weeks so I have to continue to improvise till then!
